  • Winemaking:

Soil and Microclimate: Granitic-sandy soil, good drainage and correct organic matter that allows a balanced development of the vines. Vineyard: The vines are through the espalier system, with a density planting of 4000 plants/ha. They are located in three plots of soil and seven combinations of clones and rootstocks. Green prunings and productivity control were applied to allow a correct concentration and sanity of the grape in the vineyard. Manual harvesting with selection of bunches in the vineyard. Winemaking: The grapes were harvested and vinificated separately from 3 different plots of soils, aiming to extract the best characteristics of each parcel. Detachment was controlled to maintain the integrity of the grape and avoid the extraction of undesirable compounds. Destemming grapes were conducted directly to fermentation tanks by gravity, without suffering mechanical pumping action. Cold pre-fermentation maceration from 36 to 60 hours and fermentation in stainless steel tanks, with a total maceration of 14 to 18 days. After the malolactic fermentation and natural decantation with cold temperature, the wines have been blended and remained for another 16 months in the tanks until bottling. The wine was not filtered, in order to preserve intact its natural characteristics.
